Don't turn the screen off while I am cooking
First, prepare the oriental marinade. Mix the honey and mirin, soy sauce, sake, sesame oil, and the juice of half a lemon. Finely chop the garlic, ginger, and spring onion, and add them to the marinade.
While stirring carefully, add the dried lemongrass and a pinch of pepper, then leave the mixture to rest in the refrigerator for a few minutes.
Rinse the whole sea bream and pat them dry thoroughly. Using a very sharp knife, make diagonal cuts on both sides of the fish, slicing all the way down to the bone. Then brush the fish with the marinade using a silicone brush, making sure it gets into the slits on the sides and inside the cavity. About half of the marinade should remain.
Place the fish into suitable parchment parcels (you can use either aluminum foil or baking paper) and bake in a preheated oven at 200°C for 15 minutes. Once you open and remove the parcel, continue baking until the skin turns golden yellow, for about 15 minutes more.
