Sea bass fillet in wine and caper sauce

 Pour a few tablespoons of olive oil into a large pan. Once heated, lay the sea bass fillets on top of the oil, skin-side down first. Fry for a few minutes on each side. Take the fillets out of the pan and leave them on the side.

Put onion sliced into half moons into the oil and stew until soft. Once soft, add pressed garlic and stew until the aroma permeates the room. Add capers and return the sea bass fillets.

Pour wine over it and add some water if necessary. Add spices, chopped rosemary, salt, and pepper. Finally, sprinkle with fresh parsley leaves. Leave to simmer for about 5 minutes. Serve with fine dipping bread or roughly mashed potatoes with salt, pepper, and parsley.
