From egg yolks, white wine and flour make a thicker liquid dough. Beat the egg whites until very stiff and mix them into the mix of flour and eggs so you get a light, foamy, but compact mixture.
Cut the meagre fillets into sticks of the same thickness, roll them into flour and dip in the prepared mixture. Fry the fillets on the hot oil. Fry on both sides until they turn golden and take them out on a paper towel to remove the extra oil. Fried sticks of meagre serve with a cold sauce of your choice (e.g. aurora sauce, tartar sauce, etc.).
