If you are roasting the fish in a pan, be sure to thoroughly dry it. Put several pinches of coarse salt in the pan, on a little oil, to prevent the fish from sticking to the pan. In that cause, do not season the fish with additional salt. You can serve dry wine with a fruity bouquet with the meal.

Clean the sea bream from scales and entrails. Put it on a baking tray, season with salt, drizzle olive oil over it and put in the preheated oven at 250°C. Bake for 30 minutes, depending on the size of the fish. Meanwhile, bring to a boil fish stock, juice and meat of the oranges without skin or seeds. Cook for 10 minutes and add butter and combine with cornstarch you mixed with 5 spoons of water.
Drizzle the orange sauce over the baked sea bream and serve it with a side dish of your choice.
