Lemon-scented fish “crostoni”

Intro

Paola Collenghi, the owner of the blog Zenzero e Limone, used a meagre fillet to prepare some super savory lemon-scented toasted bread. Her “crostoni” are easy to make, tasty and can be served as appetizers during a casual dinner with friends.

With a food processor, coarsely chop the parsley with the garlic clove, the dried tomatoes, the almonds and the capers desalted under running water, then soften the mince with 40 ml of extra virgin olive oil and set it aside.

In a saucepan or frying pan, brown a whole garlic clove in a few tablespoons of oil before adding the meager fillet cut into small pieces. Cook it for 3 minutes on each side and then move it to a plate, remove the dark skin and cut it into smaller pieces. Finally, salt to taste.

Brush the slices of bread with a drizzle of oil and toast them for a few minutes under the oven grill until golden and crunchy.

Arrange the pieces of meager on the bread, add the green sauce and complete it with some strips of lemon zest. Enjoy!
