Gourmand sea bass fish and chips

The dish comes from Great Britain and it is very popular across the world. Lately, the potatoes are replaced with sweet potatoes, which is an extremely healthy ingredient and it gives the dish a slightly sweet note. The dish is served with a light bright or dark beer that are not bitter, i.e. they do not have a large proportion of hops.

Clean the sea bass and marinate it for 30 minutes in a mixture of olive oil, rosemary and garlic. Thoroughly wash potatoes with the skin and cut them into bigger pieces (french fries). Briefly cook the fries in water (5 to 7 minutes), rinse and fry in deep fat. When the potatoes are done, season them with salt, little rosemary and chopped garlic. Sear the sea bass in an appropriate pan for a minute on both sides. Put the fish in an ovenproof dish and bake for 20 minutes in an oven at 180°C. Baking time depends on the size of the fish. Serve the roasted fish with crispy french fries and decorate as you wish.
